3. Saffron of Limousin: Quality of Saffron SATIVOR®    SUMMARY

SATIVOR® is a Gourmet Premium Saffron exclusively made of whole stigmas harvested from the flower of Crocus sativus (Figure 2, right). The stigmas are the Saffron's Fine Fleur , the most concentrated part in coloring and aromatic molecules. Unlike saffrons of poor quality - which also include other parts of the pistil to increase the weight of the product, or which are in the form of crumbs harder to identify (Figure 2, left - usually a good evidence of a fraud by mixture or substitution, if not an evidence of an old saffron long handled or an end of stock) - Saffron SATIVOR® is 100% pure and in the form of whole stigmas clearly identifiable. By its great purity Saffron of France SATIVOR® has a high concentration of active principles giving it indisputable culinary, medicinal and dye properties.

The superior quality of Saffron SATIVOR® was established after harvest by spectrophotometric analyses in laboratory, revealing compliance with the Superior Category as defined by international standard ISO 3632 (NEGIN A, SARGOL A, MONGRA). These analyzes assess the quality of drying and the concentration of substances responsible for gustatory, coloring, and aromatic power of Saffron, as defined in the ISO 3632 standard. These analyzes do not investigate the whole composition of the volatile fraction, responsible for the specific aromatic bouquet of each Saffron (not formalized by ISO).

Saffron of France SATIVOR® is among the best Saffrons in the market. Its biochemical profile puts it well beyond the upper thresholds of ISO 3632 and ISIRI 259-2 standards as well as above the national averages of France and Morocco saffrons (Figure 3).

SATIVOR® has a higher concentration of picrocrocin (stronger gustatory quality) and Crocin (stronger coloring power) , and is better dehydrated than required by the administration (less water is more saffron per gram and a longer life of the spice's qualities). Concentration in Safranal increases rapidly during the ripening process (here measured on a young saffron just after harvest). Safranal results from the degradation of picrocrocin during the maturation process, which needs a few months (more picrocrocin = more safranal). It is responsible for the aromatic quality of Saffron together with 10 other molecules not considered by the ISO 3632 standard

Knowing when the Saffron you buy was produced will save you from acquiring old and rundown saffron, and will tell more on the maturity of the spice, therefore on its aroma strength. 4. Saffron of Limousin: How to buy Saffron without being fooled ?    SUMMARY

Remember that even today two times more Saffron is sold Worldwide than produced... Saffron has always been the most adulterated spice, making it difficult to purchase a Saffron of quality, or even a true saffron. Fraud risk is greater with Saffrons that are imported, cheap, in powder form, or purchased abroad in tourist areas. Fraud on Red Gold has always been a commonplace!

Fraud can be (i) by mixing (a little saffron, much of anything else), (ii) by substitution (no saffron), or (iii) by a quality defect (old saffron, humidified saffron, whole pistils of Crocus sativus, etc.). A fraud can be gross (Figure 4) or more sophisticated and difficult to detect (Figure 5)

Guillemet droit simple Marque Limousin  To buy Saffron without being fooled, you must first be sure about the product's traceability (manufacturer, year of production), which is essential concerning Saffron. Avoid buying powdered saffrons and cheap saffrons (of poor quality, admixed with something else, or fully fraudulent), including in European trade channels. Saffrons of poor quality - which traveled a lot, suffered multiple handling and packaging, were exposed to storage conditions that have degraded the chemicals of the spice, and of which we only know a vague geographical origin sometimes itself fraudulent (case of Iranian Saffron sold under Spanish label) - are also common on the European market.
